Version 1.09 of Dark Souls 3 had been scheduled for 25 November, but that patch release appears to have happened early on PC. It’s an 85mb update (although it seems to require a great deal more temporary HD space while patching, something like 12GB) and largely brings fixes relating to the Ashes of Ariandel DLC.
The game’s servers seem to be down right now, which would be in-keeping with the usual patching process. 1.09 was originally scheduled for “9am to 11am CET / 12am to 2am PST” on 25 November, so if the down-time does still last the planned two hours then the servers should return shortly.
